I generally don't care for quick bread mixes too much, but my dear friend K raved about Trader Joe's pumpkin bread mix. She said she adds canned pumpkin for even more flavor. Well, I was pleasantly surprised and added my own twist to it.
To lower the fat content, I eliminated the oil and used 3/4 cup of organic canned pumpkin instead. I also reduced the 1 cup of water to 3/4 cup and used egg whites instead of eggs.
Oh yes, then I added half a bag of semisweet chocolate chips and voila: a low(er)fat autumn treat that tastes decadent, without the guilt. Super yummy (and easy)!
